THE TRUE STORY OF THE BEVERLY
( And why they'll give you a big heart )
At ten, I smoked my first pack. At eleven, I ran away for the first time. By twelve, I was getting a giant squid tattooed on my back. By thirteen, I was going out clubbing as much as I could. At fourteen, I ran away to live with a boy my own age whose parents were always abroad. At fifteen, I left school, convinced that I'd never learn anything. So, at sixteen (yes, they took their time), my parents decided to take me away from everything that seemed to be pulling me down. Faking a family trip on All Saints' Day, they exited the 747 just before takeoff, claiming an intestinal problem. After a 3-hour wait, the plane took off, leaving them on the tarmac.
When I got off the plane, I was met by a small, dark-skinned man dressed like a Mexican cowboy. His name was Charly. With a y, because Charlie with an -ie ending sounded like a chick. Charly was my father's first cousin. That made him my little cousin. He greeted me warmly and let me into his burgundy Honda Civic, purchased from his brother Emile, who had been a Civic dealer in San Diego since the release of the Beatles' White Album. Charly lived on a small Los Angeles thoroughfare, about ten kilometers from Beverly Hills. Where are you taking me, Charly ? To Disney ? Which studio? Which beach ?
He said nothing, let me take a shower, change my clothes, told me to put away the things I'd left lying around, then put me back in his dated car, heading for the Third Street Promenade. A tourist spot consisting of a single long street lined with the big names of brand names such as Gap, Banana Republic and Victoria's Secret. There, in the busiest part of the area, he had a microscopic waffle stand. He prepared waffles with truffles, cinnamon, champagne, oysters, foie gras and Bouchot mussels.
- Now you're going to make me ten liters of waffle batter, which you'll then divide into five to add a specific flavor. I'll give you the list of ingredients. Once that's done, you'll take over from Julia, who's in charge of service. At one o'clock in the morning, you can start closing the stand. But be careful: if customers keep asking for food, you have to serve them. Then you have to wash everything thoroughly with bleach and water, and I'll be waiting to take you home.
